Carrot Cake Recipe

Description:  Carrot Cake  is a favorite of many. You'll find gardeners baking them when the harvest arrives, and all year long.


Cake Ingredients:

  • 2 cups flour

  • 1 cup sugar

  • 1 cup brown sugar

  • 2 teaspoons baking powder

  • 2 teaspoons baking soda

  • 1/2 teaspoon salt

  • 2 teaspoons cinnamon

  • 1 cup vegetable oil

  • 4 cups grated carrots

  • 4 eggs

  • 1 tablespoon vanilla

  • 1/2 cup chopped walnuts

  • 1/2 cup raisins

Cream Cheese Frosting Ingredients:

  • 8 ounces cream cheese

  • 2 ounces soft, unsalted butter

  • 1 cup powdered sugar


Cake Preparation Directions:

  1. Preheat oven to 350F degrees.

  2. Grease and flour a cake baking pan.

  3. Whisk eggs and oil together.

  4. Mix in vegetable oil and vanilla.

  5. Add dry ingredients and spices.

  6. Use mixer to blend all ingredients until well blended.

  7. Add in walnuts and raisins.

  8. Bake for 50-60 minutes.

  9. Use a toothpick to see if cake is done.

  10. Allow to cool in the pan.

  11. Frost cake after it has completely cooled.

Cream Cheese Frosting Directions:

  1. Combine cream cheese, sugar, and butter in a bowl.

  2. Whisk together until frosting is smooth.

  3. Spread it over the cake (after cake has cooled).

Suggestions:

  1. You can omit walnuts or raisins, if desired.

  2. Decorating the cake makes it look great. Use carrots, raisins, walnuts, or be creative!
