Chicken Ala King Recipe
Description: This is a main course meal fit for a king.
Yield: 6 servings
Ingredients:

1 cup green peas
-
1/4 cup green pepper, chopped
-
1/3 cup boiling water
-
2/3 cup flour
-
1 cup cold milk
-
2 cups chicken broth
-
1 1/2 teaspoons salt
-
2 cups diced chicken
-
1- 4 ounce can mushroom pieces, drained and chopped
-
1 tablespoon pimento, chopped
-
Cooked minute rice, or long rice
Preparation Directions:

Cook peas, green pepper and onions in boiling water in covered pan for 5
minutes.

Drain and save liquid.

Blend flour with cold milk.

Add vegetable cooking liquid, chicken broth, and seasonings.

Slowly stir in flour mixture.

Bring to a slow boil.

Cook 1 minute, stirring constantly.
-
Add chicken, cooked vegetables, mushrooms and pimentos.
-
Heat thoroughly.

Serve hot over cooked minute rice or long rice.
