Creamed Spinach Recipe

Description: This cooked spinach recipe uses a sauce with nutmeg, for a pleasing taste. The recipe also calls for a small amount of  hot pepper, just one or two light shakes, to add a little heat. You can omit the hot pepper, if desired.

Yield: 4 servings


  • 1 pound fresh picked spinach, washed

  • 1/4 teaspoon salt

  • 1 Tablespoon butter or margarine

  • 2 teaspoons flour

  • one or two shakes ground hot pepper (omit if you don't like foods hot)

  • 1/2 teaspoon nutmeg

  • 3/4 cups milk

How to Make Creamed Spinach:

  • Coarsely cut spinach, or break by hand

  • Steam until tender.

  • Melt butter in a saucepan.

  • Stir in salt, pepper and nutmeg.

  • Stir in flour.

  • Heat until mixture bubbles.

  • Gradually add milk, stirring constantly.

  • Bring to a boil. Continue to boil for 1 to 2 minutes.

  • Remove from heat.

  • Blend in spinach.

  • Serve hot.
