This creamed spinach recipe uses a sauce with nutmeg, for a pleasing taste. The recipe also calls for a small amount of hot pepper, just one or two light shakes, to add a little heat. You can omit the hot pepper if desired. Popeye gives this recipe two thumbs up.

1 pound fresh picked spinach, washed
1/4 teaspoon salt
1 Tablespoon butter or margarine
2 teaspoons flour
one or two shakes of ground hot pepper (omit if you don’t like foods hot)
1/2 teaspoon nutmeg
3/4 cups milk
Coarsely cut spinach, or break it by hand
Steam until tender.
Melt butter in a saucepan.
Stir in salt, pepper, and nutmeg.
Stir in flour.
Heat until mixture bubbles.
Gradually add milk, stirring constantly.
Bring to a boil. Continue to boil for 1 to 2 minutes.
Remove from heat.
Blend in spinach.
Serve hot.
