Dandelion and Lettuce Salad Recipe

Description:  Those dandelion weed in your lawn, are actually a tasty garden green, when properly grown. Try this dandelion recipe, and you just might find yourself growing dandelions, as a salad green in your vegetable garden.

Yield: 8 servings

Dandelion and Lettuce Salad Ingredients:

  • 1 head lettuce, washed

  • 1 pint dandelion greens, washed

  • 1 small onion

  • 1/2 green pepper

  • 1/2 lb. Swiss cheese

  • 4 Tablespoons olive oil

  • 3 Tablespoons vinegar

  • 2 tomatoes, cut into 8 pieces each

  • 2 hard cooked eggs, sliced

  • homemade croutons

Dandelion and Lettuce Salad Directions:

  1. Cut lettuce, dandelion greens, onions, green pepper and cheese into small, bite-sized pieces.

  2. Add olive oil and vinegar, and toss lightly.

  3. Gently mix in tomatoes and eggs.

  4. Top with homemade salad croutons.

  5. Serve chilled.

Crouton tip: This recipe is best, when made with your own Homemade Salad Croutons.
