Baked Eggplant Recipe
Description: This is a basic recipe. After you've made it once,
alter it, by adding some of your favorite herbs. Basil and oregano always
goes well with eggplant. recipes.
Serves: 6-8 servings
Pre-heat oven to 325 ° F.
Cut eggplant into 3/4" slices.
Sprinkle with salt and pepper.
Dredge in flour.
Dip into egg.
Put into bread crumbs, turning to cover.
Place eggplant into a casserole dish, and dot with butter.
Put into the oven and bake for 1 hour.
