Baked Eggplant Recipe

Description:  This is a basic recipe. After you've made it once, alter it, by adding some of your favorite herbs. Basil and oregano always goes well with eggplant. recipes.

 Serves: 6-8 servings


Ingredients:

  • 2 pounds eggplant

  • 1/2 teaspoon salt

  • 1/8 teaspoon black pepper

  • 3 Tablespoons flour

  • 1-2 eggs, beaten

  • 3/4 cups bread crumbs

  • 1/4 cup butter


Preparation Directions:

  • Pre-heat oven to 325 degrees
  • Cut eggplant into 3/4" slices.
  • Sprinkle with salt and pepper.
  • Dredge in flour.
  • Dip into egg.
  • Put into bread crumbs, turning to cover.
  • Place eggplant into a casserole dish, and dot with butter.
  • Put into the oven and bake for 1 hour.
