German Potatoes Recipe

Description: This is a hearty recipe, that is great served with sausages of all kinds. But, don't limit it to just sausages. Pair it with other meats, too.

Yield: 6 servings

German Potatoes Ingredients:

  • 6 slices bacon, diced

  • 1 small green pepper, diced

  • 3 Tablespoons chopped onion

  • 3 large potatoes, peeled, boiled and diced

  • salt and pepper to taste

  • 1/2 cup shredded cheddar cheese

  • 6 eggs

Preparation  Directions:

  1. Fry bacon in a skillet.

  2. Drain all but 3 Tablespoons of drippings.

  3. Add green pepper, onion, and potatoes.

  4. Season with salt and pepper, to taste.

  5. Cook and stir until potatoes are golden brown, about 5 minutes.

  6. Sprinkle with cheddar cheese, and stir.

  7. Break eggs over potatoes mixture, one at a time.

  8. Cook on low heat, until eggs are completely cooked.

  9. Serve hot.
