This is a hearty German Potatoes recipe, that is great served with sausages of all kinds. But, don’t limit it to just sausages. Pair it with other meats, too.

The cooks tossed out the tubers and boiled the stems and leaves. Everyone who partook became deathly ill and potatoes were banned from the Royal kitchen for a long time!
6 slices of bacon, diced
1 small green pepper, diced
3 Tablespoons chopped onion
3 large potatoes, peeled, boiled, and diced
salt and pepper to taste
1/2 cup shredded cheddar cheese
6 eggs
Fry bacon in a skillet.
Drain all but 3 Tablespoons of drippings.
Add green pepper, onion, and potatoes.
Season with salt and pepper, to taste.
Cook and stir until potatoes are golden brown, about 5 minutes.
Sprinkle with cheddar cheese and stir.
Break eggs over potatoes mixture, one at a time.
Cook on low heat, until eggs are completely cooked.
Serve hot.
