Harvest Salad Recipe Description

This fresh garden harvest salad recipe makes use of a variety of vegetables that are ripe in your garden. Sometimes, not all of them will be ripe at the same time. Feel free to experiment, substituting other vegetables that are ripe now.

Harvest Salad Recipe Ingredients

1 cup peas, cooked

1 cup green beans, cooked

1 cup sliced carrots, cooked

1 cup cauliflower florets, uncooked

1 cup celery, diced

French dressing

6 tomatoes, peeled and cored

1/2 teaspoon salt

1 head lettuce

mayonnaise

parsley

Recipe Directions

  1. Toss together, peas, green beans, sliced carrots, cauliflower, and celery with a little French dressing. Chill.
  2. Sprinkle tomatoes with salt, invert on a plate, and chill.
  3. Drain excess liquid from tomatoes.
  4. Cut tomato, not quite through, into 6 sections.
  5. Place each tomato on a “cup” of lettuce.
  6. Fill with vegetables.
  7. Top with a dollop of mayonnaise and parsley.
