Mixed Greens Salad Recipe

Here's a salad mix with an interesting and palette pleasing taste and texture. Try it with your family, or for a summer picnic. This recipe can easily be cut in half, or doubled, as needed.

Yield: 8 servings

Salad Ingredients:

  • 1 head romaine (Cos) lettuce

  • 1 head chicory or escarole

  • 5 heads endive

  • 2 Tablespoons fresh minced chives or scallions

  • 1/ cup fresh minced parsley

  • 1/2 - 3/4  cup salad dressing (your choice)

  • 1/4 cup grated parmesan cheese

  • 1/2 cup salad croutons

Preparation  Directions:

  • Thoroughly wash and dry greens.

  • Break greens into bite-size pieces.

  • In a large serving bowl, toss greens together.

  • Add fresh chives and parsley. Toss again.

  • Just before serving, our your favorite salad dressing over the greens.

  • Top with grated cheese.

  • Serve with croutons on the side.
