for a wide variety of foods. This recipe, with corn and cheese is easy to
make, and will be popular with your entire family.
Contributed by: Bob M., Rochester, N.Y.
Yield: Six stuffed peppers
Tip: You can use other cheeses. American cheese is good substitute,
especially for kids. Better, still, experiment with a blend of cheeses.
Wash peppers. Cut the tops off, and remove the seeds. Rinse the cavity.
Blanch peppers in boiling water for 2-4 minutes. Or, put them in a container
of hot water, and blanch them in the microwave. Don't let them get too soft,
or they will break as you stuff them.
Pre-heat oven to 350 ° F.
Allow peppers to cool slightly, so they are easier to handle and stuff.
Combine remaining ingredients, mixing together well.
Stuff peppers with mixture.
Bake in oven for 20 - 25 minutes.
