Peppers Stuffed with Corn and Cheese Recipe Ingredients

6 green bell peppers

2 cups corn, cooked

1/2 teaspoon salt

black pepper to taste

1/2 cup grated cheddar cheese

Tip: You can use other cheeses. American cheese is a good substitute, especially for kids. Better, still, experiment with a blend of cheeses.

Recipe Directions

  1. Wash the peppers. Cut the tops off and remove the seeds. Then, rinse the cavity.
  2. Blanch peppers in boiling water for 2-4 minutes. Or, put them in a container of hot water, and blanch them in the microwave. Don’t let them get too soft, or they will break as you stuff them.
  3. Pre-heat oven to 350 ° F.
  4. Allow peppers to cool slightly, so they are easier to handle and stuff.
  5. Combine remaining ingredients, mixing together well.
  6. Stuff peppers with mixture.
  7. Bake in the oven for 20 – 25 minutes.
  8. Serve hot.
