Potato Pancakes Recipe

Description: This is a very, very old recipe. It calls for cooking with bacon fat! Today, most of us will use butter or margarine when cooking this recipe. But, we wanted to maintain Gramma's original recipe.

  • 2 cups raw potatoes, grated

  • 1 egg, well beaten

  • 1 Tablespoon flour

  • 1/2 teaspoon salt

  • 1 tablespoon light cream

  • Bacon fat or drippings

Preparation  Directions:

  1. Mix together grated potatoes, egg, flour, salt and cream.

  2. Melt bacon fat (or butter, or margarine) int the bottom of a frying pan.

  3. Drop spoonfuls of potato mixture into the heated flying pan.

  4. Cook slowly until browned on one side.

  5. Flip over and cook the other side until browned.

  6. Serve hot for breakfast with eggs, or with a main course at dinner.
