This is a very, very old recipe. It calls for cooking with bacon fat! Today, most of us will use butter or margarine when cooking this recipe. But, we wanted to maintain Grandma’s original recipe. We know you will enjoy this Potato pancake recipe.

2 cups raw potatoes, grated
1 egg, well beaten
1 Tablespoon flour
1/2 teaspoon salt
1 tablespoon light cream
Bacon fat or drippings
Mix together grated potatoes, egg, flour, salt, and cream.
Melt bacon fat (or butter, or margarine) in the bottom of a frying pan.
Drop spoonfuls of potato mixture into the heated frying pan.
Cook slowly until browned on one side.
Flip over and cook the other side until browned.
Serve hot for breakfast with eggs, or with the main course at dinner.
