Potato Soup Recipe Description

Potato soup is hearty. It will taste good on a cold winter’s day. This is a quick and easy homemade potato soup recipe.

Yield: about 5 cups.

Potato Soup Recipe Ingredients

3 tablespoon butter or margarine

1 onion, peeled and diced

1/2 cup diced celery

1 clove of garlic, minced

2 cups chicken stock

2 cups milk

4 cups potatoes, peeled and diced

1/2 cup carrot, peeled and diced

1/2 teaspoon salt

1/8 teaspoon pepper

1 teaspoon parsley flakes

Crumbled bacon

Grated parmesan or Romano cheese

Recipe Directions

  1. Melt the butter in a skillet.
  2. Add onion and garlic.
  3. Sautee until onions are soft.
  4. In a large soup pot, add chicken broth, potatoes, carrots, celery, and sautéed onions and garlic.
  5. Add salt, pepper, and parsley.
  6. Bring soup to a boil.
  7. Lower heat to simmer and cook until potatoes and carrots are soft, stirring occasionally.
  8. Add milk and heat without boiling.
  9. Pour hot soup into individual soup cups or bowls.
  10. Top with a little grated cheese, and crumbled bacon.
  11. Serve with Saltine crackers
