Pumpkin Bisque Recipe

Description: Looking for a hearty soup on a cold Fall day or night!? Try this hearty, healthy soup. Pumpkin lovers will certainly enjoy it.

Servings: 6


3 cups Carrots, peeled and chopped
1 medium Onion, chopped
2 stalks Celery, chopped
1 clove Garlic, chopped
2 pats Butter or Margarine
2 (10.75) ounce) cans Chicken Broth
3 cups Canned Pumpkin
12 ounces Evaporated Milk
1/2 cup Water
1 1/2 tsp. Pumpkin Pie Spice
1/4 tsp. Salt
1/8 tsp. Pepper

How to Make Pumpkin Bisque:
  1. In a small pan add a cup of chicken broth and cook the carrots, onions, celery and garlic until soft.
  2. Remove from heat, and let cool slightly.
  3. Pour vegetables and broth into a blender. Process until smooth.
  4. Pour mixture into a 3 quart saucepan.
  5. Add remaining broth, pumpkin, evaporated milk, water and spices.
  6. Cover and cook on medium heat until hot.
  7. Serve hot.
