Roasted Tomatoes Recipe

This roasted tomato recipe is another way to enjoy the abundance of home grown tomatoes, that you have picked from your garden. We know you will like it.

Ingredients:

  • 4 ripe tomatoes

  • 1/2 cup bread crumbs

  • 2 cloves garlic, sliced

  • 2 tablespoons chopped parsley

  • 2 tablespoons olive oil

  • salt and pepper to taste

Preparation  Directions:

  • Preheat oven to 475F degrees.

  • Cut tomatoes in half horizontally, and place cut side up in a shallow roasting pan.

  • Spread garlic slices on the tomatoes.

  • Add salt and pepper, to taste.

  • Mix together Parsley and bread crumbs in a bowl.

  • Drizzle olive oil over the tomatoes.

  • Roast in oven for 25 to 30 minutes, until bread crumbs turn a golden brown.
