So, here you are in search of something new and different.  While this delicious Italian Style Baked Summer Squash recipe may be new to you, it is at least several decades old… straight from great grandma’s recipe collection!

Baked Summer Squash Ingredients

2 small summer squash

3 tomatoes, sliced

1 medium onion, sliced

1/2 teaspoon salt

1/8 teaspoon black pepper

2 Tablespoons butter or margarine

1/3 cup grated parmesan cheese

Directions How to Make Baked Summer Squash

  1. Preheat the oven to 350 ° F.

  2. First, wash and cut the squash into thin slices

  3. Next, grease a casserole dish.

  4. Then, arrange squash, tomatoes, and onions in alternate lavers in the casserole dish.

  5. Sprinkle with salt and pepper.

  6. Dot with butter or margarine.

  7. Sprinkle on grated cheese.

  8. Cover and bake in the oven for 35 minutes.

  9. Remove the lid, and bake another 10 minutes to brown the cheese.
