Italian Style Baked Summer Squash Recipe

Description: Chances are, you've come to this recipe because you have more summer squash in your garden than you know what to do with. So, here you are in search of a new and different summer squash recipe. While this delicious recipe may be new to you, it is at least several decades old... straight from great grandma's recipe collection!


Ingredients:

  • 2 small summer squash

  • 3 tomatoes, sliced

  • 1 medium onion, sliced

  • 1/2 teaspoon salt

  • 1/8 teaspoon black pepper

  • 2 Tablespoons butter or margarine

  • 1/3 cup grated parmesan cheese


How to Make Italian Style Baked Summer Squash:
  1. Preheat oven to 350 degrees.

  2. Wash and cut squash into thin slices

  3. Grease a casserole dish.

  4. Arrange squash, tomatoes, and onions in alternate lavers in the casserole dish.

  5. Sprinkle with salt and pepper.

  6. Dot with butter or margarine.

  7. Sprinkle on grated cheese.

  8. Cover and bake in the oven for 35 minutes.

  9. Remove the lid, and bake another 10 minutes to brown the cheese.
