Vegetable Potpourri Description

This vegetable potpourri recipe is a potpourri of fresh garden vegetables. Don’t hesitate to include any other veggies that are ripe in your garden.

Vegetable Potpourri Ingredients

4 slices of bacon

2 onions, peeled and chopped

3 summer squash (or zucchini), cut into 1/2″ thick slices

1 green pepper, chopped

1 1/2 cups corn kernels

3 tomatoes, coarsely chopped

1 teaspoon chili powder

1 teaspoon oregano

1/2 teaspoon salt

1/ teaspoon black pepper

1 cup cheddar cheese, grated

Directions How to Make Vegetable Potpourri

  1. Brown bacon in a skillet, and set aside.
  2. Sauté onions in bacon drippings.
  3. Add spices.
  4. In a baking dish, add corn, green pepper, and summer squash.
  5. Pour onions and spices over the vegetables.
  6. Stir to mix together.
  7. Cover and bake for 30 minutes at 350 ° F.
  8. Uncover, stir, then bake uncovered for another 30 minutes.
  9. Remove from oven.
  10. Crumble bacon. Spread across vegetables.
  11. Sprinkle grated cheese on top.
  12. Return to the oven just long enough to melt the cheese.
  13. Serve hot.
