A lot of people enjoy beets. But, not too many gardeners grow them. So, it is not surprising if you are not familiar with how to cook fresh beets. And, sometimes you want just a plain and simple recipe to savor the flavor of a vegetable. This cooked beets recipe is just that.
Once you’ve cooked the beets, you can use them in your other favorite recipes.
Yield: 4 cups

2 pounds fresh beets
1-2 cups water
1/2 teaspoon salt (omit salt, if you are on a low sodium diet)
Pour water into a pan.
Add salt.
Bring water to a boil.
While water is heating, wash and peel beets.
Slice or dice, as desired.
Put beets into boiling water.
Cover the pan and reduce heat to a steady, slow boil.
Cook until tender, usually about 25-45 minutes.
Drain the water.
Beets are ready to use by themselves, or in your favorite beet recipes.
