Aunt Bev's Blueberry Peach Pie Recipe

Description: Aunt Bev simply described this as "It's Yummy". When you try it, I'm sure you will agree. Please note, she never described what kind of pie pastry, so use your favorite.

pie pastry

4 medium (3 cups) peaches, pared and sliced

2 cups blueberries

1 cup sugar

3 Tablespoons cornstarch

1 Tablespoon lemon juice

1/2 teaspoon cinnamon

1 Tablespoon margarine

Preparation Directions:
  1. Preheat oven to 425 ° F.
  2. Line the bottom of a 9" pie pan with pie pastry.
  3. In a large bowl, combine all ingredients except the margarine.
  4. Pour the mixture into the pastry lined pie pan.
  5. Top with top crust, and crimp.
  6. bake in oven at 425 ° F for 15 minutes.
  7. Reduce heat to 350 ° F for 40 more minutes.
  8. Remove from oven and allow to cool.

Note: This pie tastes great, topped with whipped cream.
