Carrot Cake is a favorite dessert of many people. You’ll find gardeners baking this carrot cake recipe right after the harvest. But, don’t limit making this moist cake to just after the harvest. Rather, bake it for dessert, parties, and events all year long.

Carrot Cake Recipe Ingredients

Cake Ingredients:

2 cups flour

1 cup sugar

1 cup brown sugar

2 teaspoons baking powder

2 teaspoons baking soda

1/2 teaspoon salt

2 teaspoons cinnamon

1 cup vegetable oil

4 cups grated carrots

4 eggs

1 tablespoon vanilla

1/2 cup chopped walnuts

1/2 cup raisins

Cream Cheese Frosting Ingredients:

8 ounces cream cheese

2 ounces soft, unsalted butter

1 cup powdered sugar

Making Carrot Cake Directions

Cake Preparation Directions:

  1. Preheat oven to 350° F.

  2. Grease and flour a cake baking pan.

  3. Whisk eggs and oil together.

  4. Mix in vegetable oil and vanilla.

  5. Add dry ingredients and spices.

  6. Use a mixer to blend all ingredients until well blended.

  7. Add in walnuts and raisins.

  8. Bake for 50-60 minutes.

  9. Use a toothpick to see if the cake is done.

  10. Allow cooling in the pan.

  11. Frost cake after it has completely cooled.

Cream Cheese Frosting Directions:

  1. Combine cream cheese, sugar, and butter in a bowl.

  2. Whisk together until frosting is smooth.

  3. Spread it over the cake (after the cake has cooled).

 

Suggestions:

  1. You can omit walnuts or raisins if desired.

  2. Decorating the cake makes it look great. Use carrots, raisins, walnuts, or be creative!
