French Fried Eggplant Recipe Description

This is a very old recipe, that’s sure to please. The original French Fried Eggplant recipe called for frying in fat! French Fried eggplant makes a great appetizer.

French Fried Eggplant Recipe Ingredients

1 eggplant

1 1/3 cup sifted, all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

2/3 cups milk

1 egg

Recipe Directions

  1. Pare eggplant and cut into finger-length slices.
  2. Soak eggplant in saltwater for 1 hour
  3. While eggplant is soaking, prepare fritter batter.
  4. In a mixing bowl, sift together dry ingredients.
  5. Add milk and a well-beaten egg.
  6. Mix together thoroughly.
  7. Preheat vegetable oil to 375 ° F.
  8. Drain and thoroughly dry eggplant. on paper towels.
  9. Dip eggplant into fritter batter.
  10. Fry until golden brown.
  11. Remove eggplant, and allow it to drain on a paper towel.
  12. Serve hot.

Tips:

  1. Serve with remoulade sauce, ranch dressing, blue cheese, or other dipping sauce.

  2. Try the fritter batter with other garden vegetables, like zucchini, other squashes, or onion strips.
