German Potatoes Recipe
Description: This is a hearty recipe, that is great served with sausages
of all kinds. But, don't limit it to just sausages. Pair it with other meats,
Yield: 6 servings
German Potatoes Ingredients:
6 slices bacon, diced
1 small green pepper, diced
3 Tablespoons chopped onion
3 large potatoes, peeled, boiled and diced
salt and pepper to taste
1/2 cup shredded cheddar cheese
Fry bacon in a skillet.
Drain all but 3 Tablespoons of drippings.
Add green pepper, onion, and potatoes.
Season with salt and pepper, to taste.
Cook and stir until potatoes are golden brown, about 5 minutes.
Sprinkle with cheddar cheese, and stir.
Break eggs over potatoes mixture, one at a time.
Cook on low heat, until eggs are completely cooked.
