Onion and Carrot Kabobs Recipe

Description:  Get out the skewers and lets get grilling this vegetarian treat. You don't have to be a vegetarian to enjoy it. This kabob will go will with just about any grilled meat. We do think it goes especially well with grilled ham.


  • 10 medium onions, peeled

  • 6 large carrots, peeled and cut into thirds

  • 1/4 cup molasses

  • 2 tablespoons prepared mustard.

  • 1 Tablespoon vinegar

Preparation  Directions:

  • Boil a pot of water.

  • Place onions and carrots into boiling water.

  • Boil until they begin to get tender, about 10 to 15 minutes.

  • While vegetables are boiling, mix all other ingredients together in a bowl.

  • Drain vegetables and allow to cool enough to handle. Run them over cold water, if you are in a hurry.

  • Put onions and carrots onto skewers, alternating the onions and carrots.

  • Place kabobs on the grill.

  • Baste with molasses mixture two or thee times while kabobs are cooking.

  • Grill until tender.

  • Serve hot.
