Vegetable Kabobs Recipe Description

This vegetable kabob recipe is a summertime treat. It is the perfect vegetable side dish to prepare as your garden veggies ripen. And, cooking them up on the grill is always special.

Vegetable Kabob Ingredients

1 zucchini cut into 1/2″ wheels

1 summer squash cut into 1/2″ wheels

2 green bell peppers cut into 1 1/2-inch pieces

20 – 24 cherry tomatoes

20 – 23 whole mushrooms, not too big

1 cup Italian dressing or your favorite basting oil

1 Tablespoon garlic, finely minced

Directions How to Make Vegetable Kabobs

  1. Alternate each type of vegetable onto six skewers.
  2. In a small bowl, mix Italian dressing and garlic.
  3. Brush Italian dressing or a basting oil and garlic onto vegetables.
  4. Grill on medium heat, turning frequently.
  5. Lightly brush more Italian dressing onto the kabobs a few times as they grill.
  6. Cook for about 10-15 minutes, until vegetables are crisp on the outside and tender on the inside.
